In this 1-day workshop, students will be guided by Chef Levi Massie on meat fabrication with a focus on beef. Students will learn to break down whole muscle cuts and how they can be used, while also exploring proper knife handling and gaining hands-on experience while working with your own 5lb PSMO (peeled, side muscle on) tenderloin. We'll also discuss sourcing, storage, and cooking methods to ensure optimal flavor and tenderness. Whether you're a culinary enthusiast or aspiring chef, this workshop will elevate your skills and deepen your appreciation for beef!

This class is not eligible for fee remission for Ivy Tech employees due to limited capacity. Please see our CLL fee remission guidelines for more information.

NOTES:

-  All CLL baking and cooking classes culminate with a shared meal or supplementary food that will be available during the class.

-  All supplies included, as well as any remaining food to take home. Please bring containers to take home any leftovers.

-  We will do our best to accommodate dietary/allergy restrictions, though please be aware of the class details and potential limitations of ingredient substitution.
